ST. JOHN VALLEY, Maine - St. John Valley residents may participate in a healthy potato-cooking contest later this month at the 2014 Northern Maine Fair.

The University of Maine Cooperative Extension and the Maine Potato Board will sponsor the "Potatoes For The Health Of It" potato-cooking contest, scheduled to take place Sunday, July 27 at the Northern Maine Fairgrounds in Presque Isle.

To enter, cooks may prepare a recipe using the Maine potato as a primary ingredient in a "heart-healthy" recipe, type or neatly print the recipe on a recipe card or piece of paper, and bring it between 12 and 1 p.m. to the fairgrounds. Judging will begin at 1 p.m. Winners will be announced following the judge's decision.

Recipe may be in the following categories: soups, salads, breads, casseroles, desserts and miscellaneous. Participants may enter any or all categories, with one entry per category. Cash prizes will be awarded for first, second and third places in each category, and a Best of Show prize of $100 will also be awarded, according to a press release from Cooperative Extension.

Recipes must contain no more than 30 percent fat and no more than 140 mg sodium per serving, feature Maine potatoes and use ingredients that are readily available. Information on altering recipes to reduce fat and sodium is available at the Cooperative Extension office in Fort Kent.
